GOOD FOOD FRIDAY

The Super Bowl is this weekend!! Whether you’re a Patriots (YAY!!) fan or a Giants fan, it’s going to be a day of lots of munchies. My son is hoping for wings and dips and chips.  I have a recipe for an awesome dip that has become a family favorite in my home.

MEXICAN CORN DIP

Ingredients:

3 -11 oz cans Mexican style corn (Mexicorn) drained
1-4oz can diced green chilis (drained)
5 green onions chopped
1-8oz container sour cream
1 jalepeno pepper chopped
3/4 cup mayo
10oz shredded cheddar cheese (I’ve seen a recipe added pepper jack cheese too)

Directions:

In a medium sized mixing bowl, combine all ingredients. Mix well. Cover and refrigerate for at least 2 hours.

It’s really tasty. I’m thinking of trying it out with elbow noodles and making it a pasta salad. I think it would work!

  1. Yum, sounds great Ceri. I prefer college football to pro, but since I originally hail from NJ, the Giants is my team of choice. I would root for them, the Eagles (lived in NJ near Philly), or the Dallas Cowboys (my sister state to the south). I’m gonna go check out your trailer now. I finally put your cover on my website under CPs.

  2. That sounds great. I’ll eat anything with sour cream and cheese! I’m a Browns fan, so I don’t really care who wins (I’m just so glad the Ravens didn’t make it!). I’ll be watching mostly for the commercials — hopefully they’ve have some good ones this year.

  3. There’s nothing I like more than an easy recipe…and dips are awesome. This one sounds yummy Ceri! Thanks for sharing. I won’t be home on super bowl, but my youngest and I are both dip fanatics and have been known to just have an assortment of dips and dipping yummies for dinner.
