Good morning everyone! I do love Fridays. I prefer Friday evenings over Friday mornings, but I won’t quibble about a few hours. Just glad the week is basically over.
Today’s recipe is something that is perfect for a weekend mornings.
PANCAKES!
I know, I know, why not just open a box of Bisquick and be done with it. Not in this house! It’s got to be pancakes made from scratch. I love this recipe. They always come out fluffy and good.
BUTTERMILK PANCAKES
Ingredients
1 1/4 cup flour
1 heaping tsp baking powder
1 tsp baking soda
1/4 cup sugar
pinch salt
1/4 cup veggie oil
1 egg
1 1/4 cup buttermilk
Combine all ingredients and mix until smooth. Use a non-stick pan or spray. Cook on each side until golden brown.

This sounds like my mom’s recipe….she was a big believer in homemade pancakes too!
I can’t go back to the boxed variety-unless it’s a weekday morning and someone wants pancakes for breakfast. Still, they’re nowhere near as good as homemade.
Yum! We always make homemade pancakes. We usually throw in some blueberries or chocolate chips for the kids, but there’s nothing like a plain, fluffy pancake with maple syrup!
I love blueberries in my pancakes. In the summer my mother always goes out and picks fresh wild blueberries and they go straight into the pancakes. Sometimes we put bananas in them too.
We don’t eat meat on Friday’s during Lent, so this sounds like a great idea for dinner tonight!

We had them last night. My husband had his with strawberries and whipped cream, my step daughter had hers with bananas and my son had the works-bananas, chocolate chips and whipped cream. Mine were plain with syrup. They were very tasty.
