I’m originally from Minnesota and if there’s one thing Minnesotan’s like it’s their casseroles. So today I’m going to post the casserole I grew up on.
1-1 1/2 lb hamburger 1 sm pkg cream cheese 1 sm container cottage cheese 1/2 pint sour cream 1 med green pepper chopped 1 cup onion finely chopped 8 oz pkg elbow macaroni 2 sm cans tomato sauce 1 pkg grated cheese (cheddar or maybe a mix, whatever you like best)
Boil macaroni 7 minutes then rinse & drain. Brown hamburger in tomato sauce along with onion and peppers. Add a dash of salt and ground black pepper to taste. In a separate bowl, mix the cream & cottage cheeses & sour cream. Put a layer of macaroni on the bottom of a greased casserole, followed by a layer of the cheese combo, a layer of grated cheese, and repeat. Hamburger mixture goes on top, covered by another layer of cheese.

Hey, that sounds easy…and I’m not from Minnesota, but I like casseroles too….nothing says easy peasy like a caserole! Thanks for the share Ceri!
This used to be my mom’s go-to meal when I was growing up. Everyone liked it. Thanks for stopping in.

I agree, it sounds easy and it has sour cream and cream cheese. ‘Nuf said!
Ditto!!! I love them both!
K, pardon the okie in me, but what kind of green pepper? Are we talking Habanero, jalapeno, bell? This sounds yummy with the spring weather we’re having; cool, rainy, stormy, Oklahoma. 🙂
Green bell peppers, though I think jalapenos would jazz it up.
Hope the storms will avoid you. I’ve been hearing about them on the news. Will be thinking of you.
Um. Sounds good, Ceri. Hubby loves those kind of meals. I’ll have to make that sometime.
